Gluten Free Chocolate Chip Cookies
We are trying to get our little ones interested in cooking and so far both have shown some inclination to learn (they both cracked an egg each, measured the sugar and Ansh helped sieve the flour and baking powder). Here’s a recipe that Maya (Shiv’s sister) gave us for homemade Chocolate Chip Cookies. We have taken the liberty of tweaking it slightly to make it gluten free and hope you enjoy it.
What do I need?
- 2 1/2 cups gluten free flour (We use Dove’s farm gluten free flour available in most free from aisles in UK groceries)
- 250 gms softened butter
- 1 tsp baking soda
- 3/4 cup soft brown unrefined sugar
- 1/4 cup unrefined white sugar
- 250 gms gluten free chocolate chips
- 1 packet chocolate pudding mix
- 1 tsp vanilla extract
- 2 eggs
- 1 tsp salt

How do I make it?
Pre heat Oven to 180 degree Celcius. Sieve the flour together with the salt and baking soda. Cream butter and both sugars together and then add the pudding mix. Whisk till the pudding mix has blended into the butter and sugar. Add the eggs one by one and the vaniila extract. Blend in the flour and whisk till you get a uniform creamy texture.Add the chocolate chips and mix into cookie dough. Scoop about a tablespoon of the dough mixture and place them on a grease proof Cookie sheet before baking in a 180 degree Celsius pre heated oven. Remember to space the spoonfuls as the cookies will expand in the oven. Bake for around 10 to
